How do I decrease how much money is being deducted for taxes from my paycheck?

How does the number of dependents work? I'm going to be living on my own with my bf-does the number change? I know the more dependents you have, you have less taken out? How does that rollover when it comes April and taxes are due? I'm so confused and frustrated!
